An Oregon Perspective on Food

Greg Higgins

Our food choices are much more than just an answer to hunger pangs. They impact the health of our bodies, our communities and our environment. Local, organic and sustainable food choices strengthen our community's economy, provide wholesome and nutritious foods for our bodies and minimize the negative impact of our food producing endeavors on our environment. Support our local farmers who provide marvelous seasonal fruits, grains and vegetables - these are the building blocks of healthy lives and communities. Foods should not travel great distances - their nutritional content suffers and the consumption of fossil fuels and other resources to bring them to their eventual markets is wasteful and environmentally detrimental.

Nourished by fresh, local, and seasonal foods our bodies are in rhythm with our climate - stronger, healthier and more resistant to disease. The harvest of this local bounty brings us in contact with the vendors and farmers. This local market creates a dialogue, which attaches faces and personalities to the wonderful foods that are raised here. Our dollars circulate within our communities and region - bringing benefits to all. We learn of the grower's efforts to build the soils fertility. The reduction of agric-chemical usage helps to restore the balance between nature and man. In turn, the soil yields us clean and nutritious crops.

You will find here a list of resources to help you explore this network of food relationships. These connections can help you get involved with farmer's markets, coalitions of concerned citizens, professional groups and food certifiers. It is an inspiring and rewarding topic to nourish both mind and body.
